I am up early to head to my commercial kitchen. I pick up my sister and helper for the day plus an extra large Peets coffee for energy.
Our plan is to make our 4 varietis of dough for the 22th time! For the past 2 months I have been testing, tweeking and retesting my recipes for the last 2 months and I have the 5 extra pounds to prove it! Together my sister and I have made and scooped over 1500 pounds of White Wripple Chunk, Toffee Chip Royale, Outrageous Oatmeal Raisin and White Lemon Dreams, my signature creation...I know will become one of Oprah's favorites!
It wasn't easy multiplying up my recipes from a 1/2 pound of butter per batch to pounds of butter per batch and so many times my cookies turned out so flat or cakey I couldn't even give them to friends. Do you know how many different all purpose flours there are? An then don't forget the pastry flour and baking soda vs. baking powder. A recipe really is like a formula.
I recommend you bring in a special notebook (mine is pink of course) so you can record every nuance and change you make to your recipes. You must have a scale that measures in ounces or grams and it helps if you can remember your high school or college chemistry. Unfortunately, it was the blind leading the blind since my sister and I never took chemistry, and my dad taught it at our high school...go figure. I didn't get that gene. My little pink notebook is filled with so many formulas and codes, you would think I have created the cure for cancer. I wish... My destiny is not that great, but I am doing what I can, which is why my company is committed to Hope charities and giving back. I didnt get that chemistry gene, but I did get the gene of discipline, passion and tenacity when I want to accomplish something; and taste buds that appreciate the taste of madagascar vanilla, the finest butter, and an apprecitation for the finest white and dark chocolates!
Today I can say with confidence that Lori's Legendary Cookies and cookie dough are finally "Perfect" and ready for your taste buds!
Now, the challenge is to get them from my commerical kitchen to your home kitchen....piece of cake!
